~Branding Season~

This past Friday we had our big branding day.  My son has become quite the little roper.  Last year he caught 1 calf and was pretty proud of himself. This year he caught several and was REALLY proud of himself and so were we. My 14 year old daughter got the job of branding and did an awesome job. She even roped a calf this year. :) We had several other family members and friends there to help out with shots and roping as well.
As always it's a great time! :)

Yesterday was my sister's birthday. She is due to have her baby in June so my daughter and I thought it would be fun to make her a pregnant lady cake. :) My talented brother did the belt and the paisleys.  I thought it turned out pretty cute. It had a butter cream frosting under the marshmallow fondant and it actually tasted pretty good too. It took two cake mixes mixed up Bunt Cake style for just the belly.
Which is 1 box cake mix (chocolate, white, vanilla, any flavor),
1 small vanilla instant pudding,
1 cup hot water,
1/2 cup oil
 Mix till combined
then add 4 eggs and beat for 5 minutes.
Bake at 350 for 30 to 35 minutes in a normal cake pan.
Makes a nice moist cake every time.
I used glass bowl to bake these and the belly took quite a bit longer.

~Fruit Pizza~

Getting excited about all the fresh fruit coming up. Can't wait to make some Fruit Pizza! :)


FRUIT PIZZA
Crust : 1/2 cup margarine or butter (all butter is too greasy)        
1/2 cup shortening
1 1/2 cups granulated sugar
2 3/4 cups flour
2 tsp. cream of tarter    
1 tsp. baking soda           
1/4 tsp. salt

Cream shortening and sugar together, add eggs and beat again. Mix all dry ingredients together then add a little at a time to shortening, sugar and butter.  Then press into large cookie sheet.  Bake at 400 degrees for 10 min. or until golden brown.                                 

Topping:  8oz cream cheese       
1/2 cup powdered sugar              
2 TBSP. pineapple juice (beat until smooth)        
Then fold in 1 large container of cool whip

When cookie is completely cooled spread cream cheese, cool whip mixture on cookie and top with your favorite fruit.  Strawberries, kiwi, banana(tossed in pineapple juice), pineapple, blueberries, mandarin oranges....ect.  Refrigerate

Okay, I realize that I'm probably a little over EXCITED about all the blossom's but, this is the first time, in almost 6 years that they haven't frozen and we've actually been able to enjoy their sweet smell and beautiful display! Can't you just smell the Lilac's!!! Oh my, they are delicious!!!!
